About

From Hilary Pollack, your About Food Editor

June is National Dairy Month, which means that we get to celebrate by reveling in a world of creamy, cheesy cuisine. And we’re not gonna lie: we start our morning with yogurt, sneak a slice of Swiss in our lunch sandwich, and often top our dinner with Parmesan. Dairy’s a big component of cooking, and below you’ll find some mighty tasty ways to go all-in on it. (And some unexpected ones—Chocolate Goat Cheese Truffles, anyone?)

Creamy Casseroles

There’s a reason why casseroles have remained so quintessential in American dining; they’re easy to throw together but taste awesome, and a creamy or cheesy sauce makes these dishes filling and hearty for the whole family.

  • Cheesy Chicken, Kale, and Pasta Bake

  • Cheese, Please

Chowing down on some fresh-baked Cheese Puffs while watching the new season of Orange is the New Black is what we call a well-spent weekday evening. There’s something so comforting about a warm bowl of Potato Cheese Soup or a big ol’ slice of pizza. But don’t worry; we eat our veggies too.

  • Grilled Pimento Cheese and Bacon Sandwiches
  • Chocolate Amaretto Ricotta Cheesecake
  • Fig & Port Wine Cheese Blintzes
  • Cheesy White Pizza with Kale
  • Fruit Surprise Cheesecake

  • Major Mac

Is there anything more creamy, more decadent, and more dairy-laden than a gooey bowl of macaroni and cheese? Probably not. But because it’s so rich, delicious, and easy to customize, we can’t imagine forgoing it (even if it can be a belly buster).

Yogurt is one of the easiest and most nutritious ways to start one’s day, whether it’s with a bowl of Greek yogurt topped with honey or nonfat yogurt mixed with granola. One other great thing about this dairy delight: we love it frozen!
